摘要 PURPOSE: A method of making spring onion rice cake stick(daepa garaetteock) by mixing spring onion(Allium fistulosum L.) powder and rice flour and extruding after steaming is provided. The product has better color, taste and flavor than common rice cake as well as nutrients. CONSTITUTION: Rice is soaked in water for 6 to 10hr, dehydrated and then ground with a roll mill in the first stage after adding 1.0 to 1.5% by weight of salt. Then, it is added 8 to 12% by weight of water based on the weight of the soaked rice while agitating, ground in the second stage and heated in an earthenware steamer for 30 to 50min after the earthenware has steamed up. The steamed rice is added with 2.5 to 10% by weight of dried spring onion powder or 2.5 to 10% by weight of fresh spring onion powder and extruded to give a long and slander rice cake.
