Microcapsules of coffee contain a hard matrix of hydrogenated coffee oil containing dispersed natural or synthetic coffee flavoring. Independent claims are included for: (1) manufacture of the microcapsules by bringing the aroma into contact with a hydrogenated oil so it changes its melting point, where the oil is a hydrogenated coffee oil or a hydrogenated vegetable oil; (2) flavoring coffee by mixing the above microcapsules, including those made as in (a), with powdered coffee and/or powdered coffee substitute; (3) flavoring coffee by grinding the above mixture of hydrogenated coffee oil and flavoring with powdered coffee and/or powdered coffee substitute; (4) flavoring ice cream, sweets, biscuits, pastries, coffee substitutes and other instant preparations by adding the above microcapsules to enhance their coffee flavor. supercritical carbon dioxide. |
