摘要 <p>The invention relates to a method for treating wines for stabilizing them against tartaric and proteic salts. According to the invention, mannoproteins extracted from yeast cell walls by enzymatic digestion are added to the wine. The invention also relates to a process for extracting mannoproteins by enzymatic digestion of yeasts - with a view to using the same within the claimed treatment - and to the resulting mannoprotein.</p>
