According to the invention, mannoproteins extracted from yeast cell walls by enzymatic digestion are added to the wine. The invention also relates to a process for extracting mannoproteins by enzymatic digestion of yeasts - with a view to using the same within the claimed treatment - and to the resulting mannoprotein.</p> |
