<P>PROBLEM TO BE SOLVED: To provide a method for producing frozen bean curd having various palate feelings while preventing outflow of nutritious ingredients in a production process. <P>SOLUTION: This method for producing the frozen bean curd comprises the following processes: a coagulation process of adding a coagulant to soybean milk to coagulate the soybean milk; a water regulation process of regulating the coagulated raw bean curd; a kneading process of kneading the raw bean curd containing a predetermined amount of water content to produce a kneaded product; a molding process of pouring the kneaded product in a mold, thrusting it out using a mold, or rolling it to mold the kneaded product; a freezing process of freezing the molded kneaded product under at least one stage of temperature; and a maturing process of maturing the frozen kneaded product to promote its freezing denaturation. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
