<P>PROBLEM TO BE SOLVED: To reuse bean curd lees which occurs in a large amount and most of which has been abandoned. <P>SOLUTION: A bean curd lees treating apparatus 1 consists of a water-reducing device 2 for reducing the water-content of a water-containing organic matter by half, and a stirring/fermentation tank 10 for stirring and fermenting the water-containing organic matter whose water content has already been reduced. The water-reducing device 2 is a vertically disposed type and the stirring/fermentation-tank 10 is horizontally installed, thereby forming the treating apparatus exhibiting an L-shaped configuration as a whole. By fermenting the water-containing bean curd lees at a high temperature in the stirring/fermentation-tank 10, it is possible not only to inhibit the propagation of putrefying-bacteria, but also to modify the organic matter by virtue of an effect of the fermentation bacteria.
