PROBLEM TO BE SOLVED: To provide a transportation system of a bread dough fermentation line freely setting the fermentation time of each shallow pan rack in a plurality of shallow pan racks carried into a fermentation chamber. SOLUTION: The transportation system 11 of the bread dough fermentation line is designed to successively transport shallow pans 17 in which bread dough is arranged with a conveyor 12 and stack the shallow pans 17 on each shallow pan rack 14 with a rack loader 13. In the transportation system 11, the shallow pan rack 14 is carried into the fermentation chamber 15 with carrying in means 38 and 39 to ferment the bread dough. After the passage of a prescribed time, the shallow pan rack 14 is carried out of the fermentation chamber 15 with a carrying out means 49.
