摘要 PROBLEM TO BE SOLVED: To provide a method for improving flavor of coffee extract effectively improving quality of coffee beans having unfavorable flavor with a simple processing without requiring any extra large-scale processing equipment, and a method for producing coffee liquid. SOLUTION: The method for improving flavor of coffee extract comprises roasting coffee beans having unfavorable flavor, distilling coffee liquid extracted from the roasted coffee beans to eliminate unfavorable components in the extracted coffee liquid together with water vapor.
