<P>PROBLEM TO BE SOLVED: To provide modified Kaeshi (hidden taste of Japanese cookings obtained by warming and then aging for 3-4 weeks a mixture consisting of a concentrated soy source, glutinous rice wine and reddish and slightly crude cane sugar granules) readily produceable by using a familiar natural food, capable of being preserved for a long period without adding an antiseptic, easily preserved and maintained, having excellent flavor and capable of being regulated so as to have a taste suitable for user's liking; to provide brothes; and to provide a method for producing them. <P>SOLUTION: The Kaeshi is obtained by using at least one, preferably both of a pickled plum and vinegar containing a plum component. The vinegar containing the plum component is produced by pickling the plum in vinegar. The vinegar is produced without restriction of a raw material and a production method, and a proper vinegar made from a cereal, rice, an apple, or the like, can be used as the vinegar. The vinegar containing the plum component can be obtained by soaking not only the plum but also other materials such as a shell of an egg and a salted sea tangle cited in the example, in the vinegar. Various kinds of soups exemplified by a soup for noodles are produced by mixing the Kaeshi with separately produced broth. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
