WATER-SOLUBLE SACCHARIDE AND ITS PRODUCTION METHOD

PROBLEM TO BE SOLVED: To provide a method for producing a water-soluble saccharide comprising mono-, oligo- and poly-saccharides from a plant containing a hemicellulose using only pressurized hot water.

SOLUTION: This production method for the water-soluble saccharide comprises flushing out firstly the soluble substance of the plant containing a hemicellulose using the pressurized hot water which has a temperature of ordinary to 140°C and a pressure of 1.0-3.0 times as high as a saturated vapor pressure at the above temperature, and then hydrolyzing the hemicellulose by bringing the plant into contact with the pressurized hot water having the pressure of 1.0-3.0 times as high as the saturated vapor pressure at a temperatures of 140-230°C to extract the substance containing the mono-, oligo- and poly-saccharides being in the category of a plant fiber.
