Additive for meat products contains purified carbohydrates, vitamins, sodium citrate, biotine and mineral salts in biologically suitable proportions. Used for the preservation of meat products in a similar manner to brine. Growth of undesired microorganisms is prevented, and the meat products develops a desired colour and flavour, as growth of desirable microorganisms is facilitated. Specif., the carbohydrate is dextrose, maltose, maltotriose, or maltotetraose. The additive may also contain sodium ascorbate. |
