<p>Conditioning process for oysters is intended to facilitate their opening at the moment of consumption. A notch is made in the hinge of the valves, this bares the ligament and serves as a guide to the opening tool. The notch can touch or even partially cut the ligament without harming the oyster. The oysters are placed on a conveyor belt, the upper valve being against the belt with the longitudinal axis perpendicular to the direction of movement of the belt. A sponge rubber wheel, under the pressure of a hydraulic jack, holds the oyster in position while an incision is made by a milling cutter between the upper and lower valves. The notch is sufficiently large to guide the knife of the opening operator into contact with the ligament and so facilitate its penetration.</p> |
