A food supplement based on a berry residue, comprising: (a) an extract of pressed berry skins (2-30 wt.%) obtained by extraction with a polar solvent or potassium sulfite; and (b) a particulate edible carrier (70-98 wt.%). The supplement has, in solid form, a radical protection factor of 600-10000 X 101>4> radicals per mg. A food supplement based on a berry residue, comprising: (a) an extract of pressed berry skins (2-30 wt.%) obtained by extraction with a polar solvent or potassium sulfite; and (b) a particulate edible carrier (70-98 wt.%); and (c) has, in solid form, a radical protection factor of 600-10000 X 101>4> radicals per mg measured by determining the number of free radicals in a solution of a test substance (S) by electron spin resonance (ESR) and comparing with the ESR of the extract obtained by the expression (I). RPF = (RC x RF)/Pl (I) RF : (S1 - S2)/S1; RC : test substance concentration (radicals/ml); and Pl : concentration of the active preparation. An independent claim is also included for production of the food supplement in which berry skin residue obtained by pressing (optionally with enzymatic decomposition at 40-60 [deg]C) is: (a) extracted with stirring for 3-200 minutes at 15-25 [deg]C using a monohydric 1-4C alcohol or alcohol/water mixture or for 5-200 minutes with potassium sulfite; and (b) introduced onto or mixed with a particulate edible carrier (optionally after vacuum thickening) and dried. |
