FIELD: food industry, dairy industry. ^ SUBSTANCE: the present innovation deals with dairy product, especially with cheese of different types and could be applied in cheese making. The suggested concentrated dairy product is manufactured as solid mass consisted of cheesy dough in protective membrane in which the particles of nut filler are observed as kernels and/or oil cake of pine kernels. This enables to improve protein digestibility of the product suggested due to increasing the degree of amino acid balance and avoiding the decrease of its economical purity. ^ EFFECT: higher efficiency. ^ 2 cl, 2 dwg
