摘要 FIELD: confectionery industry, in particular, production of marmalade. ^ SUBSTANCE: method involves preparing raw material; preparing syrup containing pectin, sugar and additive produced from raw plant material; cooking syrup; dressing; pouring; forming; drying and packaging ready products. Additive of raw plant material may be extract of mixture of black baikhovi tea, green baikhovi tea, cherry fruits, cherry tree leaves, and hibiscus flowers used in the weight ratio of 11:2:2:2:3. Said extract is produced by extracting of above mixture with the use of water and has dry substance content of about 2%. During cutting procedure, citric acid, sodium lactate, aromatizer "Cherry" and specific preparation are added. Said preparation is produced by sequential extraction of Pythium catenulatum micromycet biomass with the use of non-polar extractant in above-critical state, water, alkaline, water, acid, water, alkaline, and water, with following joining of first extract with solid residue. Above components are used in predetermined ratio. ^ EFFECT: provision for producing of marmalade having sour sweet and slightly bitter taste, stable dense consistency, specific soft berry aroma with prevailing cherry taste, and distinct C, B, F and PP vitamin activity.
