Foods are seasoned by adding thereto tricholomic or ibotenic acid, or a non-toxic salt thereof. 5<SP>1</SP>-nucleotides, non-toxic salts thereof, and/or monosodium glutamate may also be added. A seasoning composition comprises tricholomic or ibotenic acid, or a non-toxic salt thereof, and a 5<SP>1</SP>-nucleotide, with or without monosodium glutamate. The tricholomic and ibotenic acid may be employed in the form of crude or purified extracts of Tricholoma muscarium Kwamura and Amanita strobiliformis (Paul.) Quel., respectively. |
