GERMINATED BEANS WITH FAVORABLE FLAVOR, PROCESSED BEAN FOODS USING THE SAME AS STARTING MATERIAL AND FOODS CONTAINING THE SAME

It is intended to elevate the nutritional value of beans and improve the flavor thereof by using germinated beans with a germination ratio of from 10 to 100% and thus regulating the ratio by mass of the gamma-aminobutyric acid content to the isoflavone content in the beans within a definite range or, in some cases, regulating the gamma-aminobutyric acid content per 100 g of the solid matters in the beans within a definite range. It is also intended to elevate the nutritional value of a processed bean food and improve the flavor thereof by using the germinated beans as a starting material in producing the processed bean food.
