PROBLEM TO BE SOLVED: To provide a method intended for solving such a problem that, as the growth of bacteria of conventional fermented food and drink on the market is not always excellent, a prescribed number of live bacteria is not secured, and so for producing fermented food and drink with a stable number of bacteria through improving the growth of bacteria in the fermented food and drink. SOLUTION: A fermentation adjusting agent as a composition containing a specific component is added to the fermented food and drink at the initial stage of production so as to adjust the action of lactic acid bacteria and promote fermentation. As a result, the bacterial number of lactic acid bacteria in the product is stabilized and the fermented food and drink is made deliciously eatable. COPYRIGHT: (C)2005,JPO&NCIPI
