GLUCONATE DEHYDRATASE HAVING IMPROVED THERMOSTABILITY AND STORAGE STABILITY, AND PRODUCING 2-KETO-3-DEOXYALDONIC ACID FROM ALDONIC ACID

PURPOSE: Gluconate dehydratase is provided, which enzyme has improved thermostability and storage stability, and effectively produces 2-keto-3-deoxyaldonic acid from aldonic acid. CONSTITUTION: The gluconate dehydratase dehydrates D-gluconic acid to produce 2-keto-3-deoxyaldonic acid, and maintains 95% or more of activity when the gluconate dehydratase is preserved in 30 mM of tris(hydroxymethyl) aminomethane buffer solution(pH 8.5) containing 1 mM of sodium D-gluconic acid and 1 mM of magnesium chloride at 55 deg. C for 2 hours, wherein the gluconate dehydratase is isolated from Achromobacter xylosoxidans; and the gluconate dehydratase has the amino acid sequence set forth in SEQ ID NO:1. A gene encoding the gluconate dehydratase is provided.
