摘要 <P>PROBLEM TO BE SOLVED: To provide a method for enhancing tangle flavor; to obtain a tangle flavor-enhancing agent; and to provide seasoning or food/drink to which seasoning or the tangle flavor-enhancing agent is added. <P>SOLUTION: This method for enhancing tangle flavor of the food and drink comprises adding at least one kind selected from fatty acid, light-irradiated fatty acid, and heated fatty acid to food and drink having tangle flavor, and irradiating tangle or a tangle extract with light, or heating tangle or the tangle extract. The tangle flavor-enhancing agent contains at least one kind selected from fatty acid, light-irradiated fatty acid and heated fatty acid as an active ingredient. The seasoning is obtained by addition of at least one kind selected from fatty acid, light-irradiated fatty acid and heated fatty acid.
