A method for inspecting the viscera removed from poultry carcasses comprises hanging the carcasses from a first conveyor, removing the viscera using eviscerating devices on a second conveyor and synchronizing the movement of the eviscerated carcass and its viscera through an inspection station. The viscera is suspended from or supported by the eviscerating device during transport through the inspection station.
