An assembly discharges pre-formed slices of mincemeat through an outlet (5). The slices are placed on a skewer alternating with thin slices of non-minced meat forming a doner kebab. The diameter of the discharging minced meat esp. can be varied. The assembly incorporates a memory device and an input interface (21) specifying the thickness diameter, and quantities in which the portions are to be discharged. The mincemeat descends through a filling pipe (3) to the height-adjustable discharge output (5). Also claimed is an operating process in which the output tube rises and falls with each discharge cycle.
