KIMCHI CONTAINING WASABIA JAPONICA MASTUM HAVING ANTIOXIDANT ACTIVITY AND ANTI-HYPERLIPIDEMIA ACTIVITY AND PREPARATION METHOD THEREOF

摘要

PURPOSE: Kimchi containing Wasabia japonica mastum and a preparation method thereof are provided, thereby giving useful function of Wasabia japonica mastum such as antioxidant activity and anti-hyperlipidemic activity to kimchi. CONSTITUTION: The kimchi contains 5 to 20 wt.% of Wasabia japonica mastum based on the weight of Chinese cabbages. The method for preparing the kimchi containing Wasabia japonica mastum comprises the steps of: (1) salting Chinese cabbages; (2) adding 5 to 20 wt.% of Wasabia japonica mastum into a kimchi dressing to prepare a mixed kimchi dressing; and (3) adding the mixed kimchi dressing into the salted Chinese cabbages.
