摘要 PURPOSE: IgY titer improved egg yolk powder and a preparation process thereof are provided, thereby selectively removing fat components which do not affect the IgY titer, so that the fat component ratio can be reduced and the IgY titer can be improved. CONSTITUTION: The process for preparing the IgY titer improved egg yolk powder comprises the steps of: (a) filling the liquid or powder of egg yolk into an extraction vessel, and storing liquid carbon dioxide into a carbon dioxide storage tank; (b) compressing the carbon dioxide in the storage tank using a high pressure pump; (c) increasing the temperature of the compressed carbon dioxide through a heat exchanger to induce the supercritical status of the carbon dioxide, and passing the supercritical status of carbon dioxide through the extraction vessel to remove a fat component, lipoprotein from the egg yolk; (d) expanding the supercritical status of the carbon dioxide containing lipoprotein under reduced pressure and inserting it into a separation tank to separate lipoprotein; (e) recycling the lipoprotein removed carbon dioxide into the liquid carbon dioxide storage tank; and (f) spray drying or freeze-drying the fat-removed egg yolk.
