<P>PROBLEM TO BE SOLVED: To provide low protein cereal having well-balanced nutritive value and easily obtainable for diet therapy for kidney disease patients, and to provide a method for producing the low protein cereal. <P>SOLUTION: The method for producing the low protein cereal comprises a labeling process H of labeling PB-I and PB-II by antigen-antibody reaction among protein body patterns of storage protein contained in cereal and observing the PB-I and PB-II, an image processing process G of capturing images labeled by the labeling process H to compute a percent occupied by the PB-I and PB-II and localized positions thereof, and determining the shape of flat polished rice and the percentage of polished rice from the percent occupied by PB-I and PB-II and the localized positions thereof computed by the image processing process G. Furthermore, the method comprises a rice polishing process S of selecting the abrasive grain of a rice polishing machine according to the shape of the flat polished rice, and controlling peripheral velocity and pressure to remove PB-II at high ratio from the storage protein contained in cereal. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
