<P>PROBLEM TO BE SOLVED: To obtain a package of fresh raw small fish for safely preserving/distributing/selling the raw small fish to be easily spoiled such as dried young sardines in a condition of being kept fresh as a fresh market commodity, imparting the raw small fish favorable flavor and eatable as it is or by heating without newly seasoning, and to provide a method for preserving/distributing/selling the seasoned raw small fish such as dried young sardines in a condition of being kept stable as a fresh market commodity. <P>SOLUTION: This package of the raw small fish is obtained by filling/sealing the raw small fish such as dried young sardines together with a seasoning liquid to be soaked in the seasoning liquid. The method for preserving/distributing/selling the raw small fish comprises preserving, distributing and selling in a condition of filling/sealing the raw small fish such as dried young sardines together with the seasoning liquid to be soaked in the seasoning liquid. It is preferable to fill the seasoning liquid at ≥50 wt.% of the weight of the raw small fish in the package of the fresh small fish. As for the seasoning liquid, it is preferable to use soy sauce or soy sauce-based seasoning or their diluent, an over 30% concentration solution of saccharides, a solution of a reducing starch decomposition product, an over 3% concentration saline solution or salted seasoning liquid based on the saline solution, the complex of the seasoning liquids, and extractives derived from either agricultural products/livestock products/marine products or microorganism, or its dilute (excluding a ≤10% concentration fish soy solution). <P>COPYRIGHT: (C)2005,JPO&NCIPI |
