PROBLEM TO BE SOLVED: To provide a reliable heat sterilization device applicable to a wide range of liquid food, and surely monitoring sterilization time. SOLUTION: The heat sterilization device has a pipe line 2 through which liquid food passes, and an injection heater 3 blowing steam into the pipe line to heat the liquid food. In the device, the steam is mixed in the liquid food so as to subject the liquid food to heat sterilization while passing the steam through the pipe line. An electromagnetic flowmeter 5 is provided at a position B where the concentration of the steam in the liquid food, or at the lower side than the position so as to examine to see whether sterilization condition is good or not based on the flow data according to the electromagnetic flowmeter.
