PURPOSE: Provided are a meat-aging solution using natural palm juice and the decoction of medicinal herbs selected from Astragalus membranaceus (Fischer) Bunge, licorice root, a bay tree, Angelica gigas and cinnamon, and a method for aging meat using the same. CONSTITUTION: The meat-aging solution is manufactured by the steps of: collecting natural palm juice; heating 5-20g of at least one selected from Astragalus membranaceus (Fischer) Bunge, licorice root, a bay tree, Angelica gigas and cinnamon in 2000ml of water for 4 hours to give decoction; mixing the palm juice and the decoction in a weight ratio of 1:4; and aging the mixture at 5-6 deg.C at low temperature for 12 hours. |
