PURPOSE: An apparatus and method of hot air drying of red peppers are provided, thereby automatically drying a large number of red peppers at one time, so that productivity of dried red peppers can be improved and production cost of dried red peppers can be reduced. CONSTITUTION: The method for hot air drying of red peppers comprises the steps of: transporting undried red peppers into the inside of a housing(200) of an apparatus by a conveyer belt in a product supplying portion; placing the transported red peppers on the top of a supporting portion(400) to support them; supplying the red peppers on the supporting portion(400) with dried air using a dried air supplying portion(500); measuring the drying status of the dried red peppers and opening the supporting portion(400) by operation of a control portion(600); and discharging the dried red peppers which are moved along a slope(220) of the housing(200) into a guiding area(230) to the outside of the housing(200) using a screw(710).
