Method of making a lipid composition containing Glycyrrhiza hydrophobic components comprises extracting the plant with a lipid solvent (L) containing at least 10 wt.% lipid soluble polyhydric alcohol fatty acid ester(s) (FAE). Independent claims are also included for: (a) a composition obtained by the method; and (b) a lipid foodstuff containing the composition.
