PURPOSE: A method of producing tofu by mixing sea tangle(laminaria), magnesium chloride and soybean milk without using a coagulant is provided. It reduces the cost of production and simplifies the manufacturing process. CONSTITUTION: Sea tangle is finely cut, soft-boiled at about 45deg.C, dehydrated and mixed with soybean milk. Thereafter, the mixture is added with about 4% by weight of 0.02% magnesium chloride and heated with various seasonings and flavors at about 70deg.C or more and then compressed when it hardens. |
