PURPOSE: Citrus peel tea containing carrot juice prepared by mixing carrot juice, citrus peel powder and white sugar is provided. The citrus peel tea has characteristic color, taste and flavor of Citrus sunki and is rich in nutrients. CONSTITUTION: The citrus peel tea containing carrot juice is prepared by the steps of: mixing 1L of carrot juice, 0.5 to 1.5kg of citrus peel powder and 2 to 5kg of white sugar; aging the mixture at 10 to 25deg.C for 10 to 30 days; and filtering it. In the mixing process, 1L of carrot juice also can be mixed with 0.5 to 1.5kg of citrus peel powder, 1 to 3L of fruit juice of Citrus sunki(Hayata) hort., fruit juice of Citrus junos Tanaka, 0.5 to 2kg of skin powder of Citrus junos Tanaka, 0.3 to 1L of fruit juice of Opuntia dillenii(Ker-Gawl.) Haw. and 3 to 15kg of white sugar.
