A method is provided in which an extracted beverage with excellent organoleptical properties can be produced from the bark and sap layer of wood, particularly from young bark and sap from pine and juniper. The method includes as steps: batchwise extraction of the bark material with boiling water in a suitable extraction vessel and discharging the extract and extraction residue, repeating the extraction procedure using fresh bark material but without scaling the protective layer from the inner surface of the extraction vessel, repeating the procedure until a clearly distinguishable red colour reaction is observed in the extract, extracting in subsequent batches the bark material to this colour reaction, and recovering the extract so produced. |
