PURPOSE: Provided is a method for manufacturing fermented wine by mixing fresh and dried oak mushroom with cereals and fermenting the mixture thereof. The manufactured wine contains useful efficacy of oak mushroom, so that the wine can have improved taste and flavor, and recovers a hangover. CONSTITUTION: The method for manufacturing fermented wine using oak mushroom comprises the steps of: mixing selected and washed cereals with the finely cut, selected and washed fresh oak mushroom; dipping the mixture in water and steaming it; cooling the mixture; adding a fermenting agent into the mixture; adding powder of dried oak mushroom; and fermenting the mixture at room temperature for an appropriate period of time, wherein the amount of the fresh oak mushroom is 25 wt.%; and the amount of the dried oak mushroom is 5 wt.%.
