The invention relates to a method for controlling ambient conditions during transportation of food in large containers (20), especially ship containers, or the storage of food in chambers. At least one essentially air-tight container (10) made of a flexible plastic film (2) is introduced into the container (20) and/or the chamber and the food is placed in the container (10) and the container (10) is subsequently closed. The oxygen content in the container (10) is reduced to below a predetermined threshold value by rinsing using at least one other non-toxic expulsion gas (38). An oxygen measuring unit (51) which is used to measure the oxygen content in the container (10) during the transportation and/or storage is arranged in the container (10). The invention also relates to a special embodiment of said type of container (10).
