PURPOSE: A method of making mustard by peeling mustard, drying the mustard grain, squeezing and grinding the dried mustard grain is provided. It thoroughly removes pesticides from the mustard and improves the inherent color and pungent flavor of mustard. CONSTITUTION: The method of making mustard comprises the steps of: skin peeling stage(10), wherein the mustard is peeled, ground into a predetermined size; grinding stage(20), wherein the ground mustard is dried with warm air at 40 to 60deg.C for 20 to 40min; squeezing stage(40), wherein the dried mustard is squeezed at 20 to 40deg.C with a squeezer; grinding stage(50), wherein the residue generated after squeezing oil from the mustard is ground; drying stages(60) wherein the ground residue is dried with warm air at 10 to 25deg.C; powdering stage(70),wherein the dried residue is processed into powder; and foreign material separating stage(80), wherein foreign material are separated from the powder. |
