Cultured or bred tuna fish meat having the tone change of ordinary muscle thereof after processing slowed as compared with that of common cultured or bred tuna and having the tone change synchronized with the change of freshness. There is further provided a feed for tuna comprising chili pepper and/or chili pepper components, specifically a feed for tuna comprising chili pepper and/or chili pepper components, particularly capsaicin, as ingredients capable of slowing the tone change of ordinary muscle of tuna. Tuna is a fish belonging to the thunnus genus of the mackerel family. Tuna fish meat is produced by culturing tuna with the use of the above feed for tuna. |
