PURPOSE: A method for preparing persimmon vinegar using Brassica rapa and persimmon is provided. The persimmon vinegar has useful efficacy of persimmon and Brassica rapa, and is thus useful for the prevention of diseases and the removal of a hangover. CONSTITUTION: The method for preparing persimmon vinegar using Brassica rapa and persimmon comprises the steps of: washing Brassica rapa and extracting it to give Brassica rapa juice; mixing the Brassica rapa juice with persimmon in a ratio of 3:1; fermenting the mixture for 7 months; extracting the juice from the fermented mixture; maturing the extract for 5 months; storing the matured solution at 18 to 22 deg. C in a place where a direct light is avoided and ventilation is good; filtering the stored solution to remove precipitates; and inserting the filtered persimmon vinegar into a bottle. |
