PURPOSE: A method of making health bread by mixing vegetable juice or vegetable powder with conventional raw material for making bread is provided. The product has good taste and flavor and characteristic color and is rich in nutrients beneficial to the human body. CONSTITUTION: A raw material for making bread containing 61 to 65% by weight of wheat flour, 3 to 10% by weight of sugar, 4.5 to 10% by weight of shortening, 1.0 to 2.0% by weight of yeast, 0.5 to 2% by weight of salt, 5 to 15% by weight of milk and water is mixed with 2 to 18% by weight of vegetable juice or vegetable powder. The mixture is kneaded, fermented in the first stage, molded, fermented in the second stage and then baked.
