发明名称 METHOD FOR PRODUCING LIQUORS
摘要 <p><P>PROBLEM TO BE SOLVED: To obtain a refined rice wine-like liquor which abundantly contains GABA (γ-aminobutyric acid) and has excellent flavor. <P>SOLUTION: The subject method for producing liquors comprises polishing unpolished rice at 99-90% high polished rice rate so as to leave embryo buds and immersing the polished rice in water to germinate it. The germinated rice is drained or not, mixed with a liquefying enzyme and lipase, heated to 95°C, kept at the temperature for a fixed time, cooled to 55°C, mixed with an saccharifying amylase and kept at the temperature for a fixed time to give a liquefied saccharified substance. The liquefied saccharified substance is used in unrefined product of refined rice wine produced according to the routine procedure of brewing of refined rice wine and refined rice wine is squeezed and separated from sake lees to produce a refined rice wine-like liquor abundantly containing GABA formed/increased by germination action of rice and in liquefaction and saccharification process of germinated rice. Germinated rice is boiled into boiled rice according to the brewing process of refined rice wine, is fed as boiled rice to unrefined rice wine or further saccharified and is used in a four-step fermentation. <P>COPYRIGHT: (C)2005,JPO&NCIPI</p>
