PROCESS FOR PRODUCTION OF OLIVE OIL

The disclosed invention concerns a process for production of olive oil. The process includes separation of sludge and water out of the olive in a rotor of a centrifugal separator (10) and intermittently discharging the separated sludge out of the rotor. To decrease the loss of valuable olive oil together with the discharges sludge an intimated charges follows a sequence of steps, during which the olive oil in the separation chamber formed in the rotor is displaced radially inwardly and pressed out of the rotor and further through a re-circulation conduit (18) to a passage located upstream of the inlet (19) of the centrifugal separator (10) e.g. to an intermediate tank (11) prior to the discharge of sludge.
