<P>PROBLEM TO BE SOLVED: To obtain a gelling agent composition imparting physical property suitable for a person with reduced ingestion/swallowing function such as the person with ingestion/swallowing difficulties or an aged person, to conventional foods wherein the physical properties imparted to foods are (1) excellent block forming property (cohesiveness of foods in the mouth), (2)slight in adhesive property in the oral cavity and larynx, (3) excellent water holding property, and to provide the gelling agent composition capable of easily adjusting properties of foods at bed side by an ingesting person or a care personnel without using a specific cooking tool according to taste or degree of difficulties of the ingesting person. <P>SOLUTION: The foods for persons with ingestion/swallowing difficulties are obtained by formulating a gelling agent comprising (a) coprecipitation product of at least two kind of polysaccharides selected from guar gum, tara gum or locust bean gum and (b) xanthan gum and/or κ-carrageenan, wherein the gelling agent imparts a weak gel structure to the conventional foods without subjecting to a heating process, and imparts an optimum properties suitable for ingesting/swallowing to the foods. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
