摘要 PURPOSE: An oil or fat composition improved in characteristic taste of monoglycerin difatty acid esters by adding diglycerin fatty acid esters to oil or fact containing monoglycerin difatty acid esters having an antiobesity effect by reducing accumulation of body fat is provided. The product has good flavor and excellent compatibility, eating quality, appearance, working properties and emulsifying properties for raw material. CONSTITUTION: The oil or fat composition comprises: (A)100 parts by weight of oil or fat containing 0.1 to 10% by weight of monoglycerin monofatty acid ester, 1 to 64.9% by weight of monoglycerin trifatty acid esters and 35 to 98.9% by weight of monoglycerin difatty acid esters having an unsaturated fatty acid content of 80 to 100% by weight of constituent fatty acids; (B)0.1 to 3.0 parts by weight of diglycerin fatty acid ester containing 40 to 100% by weight of difatty acid ester having an unsaturated fatty acid content of 70 to 100% by weight of constituent fatty acids; and (C)0.01 to 2 parts by weight of an antioxidant. It also contains a phytosterol component(D) in a weight ratio of (D):(A)=1 to 5:1 based on the component(A) and 0.01 to 2.5 parts by weight of a crystallization inhibitor(E) based on 100 parts by weight of the component(A).
