摘要 FIELD: food industry, baking branch. ^ SUBSTANCE: method involves selection and preparing a sample, dilution, seeding in nutrient medium, culturing and recording the growth indices of mold fungi. The sample is taken off from an article surface as a thin surface layer (2-5 mm) that is sown in liquid medium using method of step-by-step two-fold dilution. Results are recorded by the presence of the mycelium growth indices in dilutions by measuring the amount of mold fungi on surface of baked article by the formula: K = a:S wherein K is the amount of mold fungi per unit of surface of baked article; S is a square value of article surface taken off as a sample; a is amount of mold fungi in the sample that is calculated by the formula: a = 2(N-1) wherein N is maximal number of flask wherein the growth of mold fungi is recorded. Invention provides determining the amount of mold fungi on surface of baked articles in cases when it is less 1 CFU/g of product. Except for, method provides calculating the amount of mold fungi per unit of baked article unit.
