PROBLEM TO BE SOLVED: To provide a heating cooker for performing good work by controlling a heating means and steam charging conditions corresponding to various cooking processes. SOLUTION: The heating cooker comprises a heating chamber heating means such as a vertical heating means 13, an air flow generating means 15, a steam generating means 16, a heating chamber temperature detecting means 25, a steam outlet temperature detecting means 26, an operating means 27, and a control means 31. The vertical heating means 13, the steam generating means 16 and the air flow generating means 15 are controlled corresponding to changes of the cooking processes and heated objects. The heating cooker which is simple and superior in heating efficiency performs heating cooking in conditions adaptable for various heating cooking while the control means 31 varies all or part of a steam amount, a steam temperature, and the velocity and rate of an air flow in a heating chamber 12 corresponding to values set by input to the operating means 27.
