A modified sarcosine oxidase (I) that has better stability under acidic conditions than the wild type enzyme, is new. Independent claims are also included for: (1) sarcosine oxidase gene (II) that encodes (I); (2) recombinant DNA comprising (II) inserted into vector DNA; (3) transformants and transductants that comprise the recombinant DNA of (2); and (4) producing (I) by culturing cells of (3).
