PURPOSE: A method of making pitaya fruit ices by mixing pitaya(Hylocereus undatus) fruits and frozen cream containing milk products and sweeteners is provided. The product has characteristic taste and flavor of pitaya fruits and can be stored for a long period of time. CONSTITUTION: To produce pitaya fruit ices, 5 to 80% by weight of pitaya fruits are mixed with frozen cream containing milk products and sweeteners, and ice. For an example, 8.3% by weight of fresh milk is mixed with 3.5% by weight of fresh cream, 2.7% by weight of condensed milk, 1.5% by weight of cheese, 4.4% by weight of glucose, 7.3% by weight of fructose, 2.3% by weight of a flavor and 33% by weight of water, frozen and then ground to a size of 5mm. The ice is mixed with pitaya fruits in a weight ratio of 5:5 and then frozen to -8deg.C.
