PURPOSE: A microorganism Bacillus polymyxa MGL21 producing cycloinulooligosaccharide fructanotransferase, and methods for producing cycloinulooligosaccharide fructanotransferase and cyclofructan using the same microorganism are provided, biologically mass-producing the cycloinulooligosaccharide fructanotransferase(CFTase). CONSTITUTION: The microorganism Bacillus polymyxa MGL21(KACC 91047) produces cycloinulooligosaccharide fructanotransferase. The method for producing cycloinulooligosaccharide fructanotransferase comprises culturing Bacillus polymyxa MGL21(KACC 91047) in a medium, and isolating cycloinulooligosaccharide fructanotransferase from the cultured medium. The method for producing cyclofructan comprises reacting the cycloinulooligosaccharide fructanotransferase with inulin.
