PURPOSE: A method of making strawberry vinegar red pepper paste by mixing aged strawberry red pepper paste, fresh strawberries or concentrated strawberries and other materials is provided. The taste of the product is mild and less spicy or hot than that of conventional vinegar red pepper paste while having characteristic taste and flavor of strawberries. CONSTITUTION: The strawberry vinegar red pepper paste comprises 20 to 60% by weight of strawberry red pepper paste; 1 to 30% by weight of a fresh strawberry or a concentrated strawberry; and other materials containing brewed vinegar, citric acid, sodium citrate, corn syrup or other sugars, black mustard powder, strawberry seeds. To make the vinegar red pepper paste, strawberries are firstly washed and ground after removal of stems. Then, the ground strawberries are mixed with aged strawberry red pepper paste or general red pepper paste and other materials and then sterilized. |
