<P>PROBLEM TO BE SOLVED: To obtain an emulsified oil-and-fat composition solving such problems of a conventional emulsified oil-and-fat composition containing an emulsifier that its nature varies depending on the variety or mixing ratio of the emulsifier, a certain level of skill in handling is required, and there is the possibility of fear of unexpected harmful effect caused by reaction of the emulsifier to other substances. <P>SOLUTION: The emulsified oil-and-fat composition is obtained by properly adding a small amount of sugar and/or salt to ionized alkaline water having strong alkalinity of ≥pH12, mixing the alkaline water with edible vegetable oil, and stirring at a high speed. This results in making oil particles uniformly disperse in the solution via surface-active power of the ionized alkaline water so as to mix water with oil without using any emulsifier to form stable emulsion. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
