PROBLEM TO BE SOLVED: To provide a method for producing roasted coffee beans surely improving flavor of roasted coffee beans, particularly surely reducing unpalatable flavor of low-grade coffee beans such as the species of Robusta coffee beans. SOLUTION: The method for producing roasted coffee beans comprises subjecting roasted coffee beans to tannin-eliminated acidic solution followed by reducing the moisture of the roasted coffee beans to≤4 wt.%.
